Hydro P.U.N.C.‘s Alzate Provides Insight Into Sustainable Indoor Farming on LIVE

Owner of the cafe and eatery Hydro P.U.N.C. Ameth Alzate provides insight into the concept of sustainable indoor farming through hydroponic systems right in Central Falls.
While the concept of “farm to table” is very much present here in Rhode Island, the idea of a restaurant obtaining its produce from its very own indoor, hydroponic farm is very new.
“Hyrdo P.U.N.C. is growing its own food. The beauty of that is that we are not only are we aiming towards chemical free products, but it is all locally grown, we are reducing our carbon emissions by up to 94%,” says Alzate.

“The average tomato travels an average of 1400 miles. They are forced ripened and added with chemicals and preservatives. Our model is that we grow it right where the customers are going to consume it,” says Alzate.
The cafe boasts tall glass windows that allow customers to see exactly where the lettuce for their salad is coming from. The ecosystem in the hydroponic room keeps the temperature, moisture, and nutrients balanced so that everything grows properly.
Alzate foresees Hydroponics becoming a major source of food in the future.
“We want to be able to provide, not only in our restaurant, but for other restaurants and consumers, a product that that is within a short radius that will allow short distances and less packaging and chemicals, and what you harvest today, you deliver today.”
Hydro P.U.N.C. Cafe is incorporating their own produce right into the food they are serving.
“Our menu is cool. Our smoothies incorporate kale, cilantro, and mint that we grow in house. We have great salads, wraps, paninis, burritos, and quesadillas. We bake all of our own pastry in-house, and we try to look for what our customers like best,” says Alzate.
