Mathieu joined GoLocal LIVE in the Navigant Credit Union Broadcast Center Tuesday to talk about the company's unique approach.
"What we're trying to do is change the way people get the product," Mathieu said. "Most non-dairy milk is made by mixing the product, whether it's almonds, soy, or anything else, with a large quantity of water. Our approach takes that mixture and concentrates it into a smaller volume, making it much easier to store and less heavy."
The concentrate is put into a dispenser and mixed with water like any other fountain beverage. The compact design would allow for several non-dairy milk options to be offered within a single dispenser.
"Anyone who's been to a college dining hall will recognize our dispensers, which are the same ones used for juice," Mathieu said.
The pair met while attending Brown University when both were working with racecars. They decided to pursue non-dairy milk distribution after seeing its rise in popularity, especially in younger people.
"Non-dairy milk is really popular, so there's definitely a demand," Mathieu said. "I don't think it's just a fad either, there really seems to a be cultural shift towards these other options. While for some it's due to diet restrictions, a lot of people are finding they just prefer non-dairy milk. We want to make it more accessible to everyone."
Eve and Mathieu is currently working to partner with several Rhode Island colleges and universities to pilot the dispensers this fall, and future plans include other local businesses and coffee shops, as well as individual consumers.
"We're mainly sticking with the subscription model for now, though we hope to be available in grocery stores across the country at some point," Mathieu said. "Bringing home just one small bottle of concentrate will be much easier than several gallons of milk."
The company currently offers almond, soy, and coconut milk options, made with as many local ingredients as possible.
"Oat milk is gaining popularity as well, so we're hoping to look into offering that next, ideally made with only locally-sourced oats and sweeteners," Mathieu said.
