Kleo's Owner Lynch Talks Mediterranean Flavors on LIVE

GoLocalProv’s Laura Afonso speaks with Chef Lauren Lynch, owner of downtown Greek restaurant Kleo’s, about Mediterranean flavors right here in Providence. Her husband and co-owner of Kleos, Tom Bovis being from Greece, brings his hometown flavors to Providence as Chef Lynch creates an authentic Greek menu.

“Since meeting my husband I have learned how to make Greek food, to bring a taste of where he comes from. We go to Greece every summer and all I do is eat to get ideas for dishes and recipes. I wanted to do things that were maybe traditional Greek, but more familiar to people” says Lynch. 

In a city so abundantly populated with Italian restaurants, Kleo’s offers an authentic and classic cuisine straight from the Mediterranean.

Across the menu, flavors of lemon and oregano permeate just about every dish. The most commonly used ingredient Chef Lynch uses, “Olive oil is huge, it is the primary fat that they cook with in Greece. This olive oil is from my husband’s family olive farm in Greece. Some of the trees his father planted and his cousin now operates it and ships us olive oil to use in both restaurants as well as bottle them so they are available for purchase.”  

Along with her, Chef Lynch brought along an octopus ragu that will headline the new menu being released next week. 

“We braise the octopus for over three hours to make the ragu. We incorporate saffron, citrus, tomato, Greek wine and garnish with dill” says Chef Lynch. The new menu will also incorporate fun, traditional Greek desserts.
