There are many beautiful places in Italy, but the Isle of Capri might just be the most beautiful of all. This place is all about the sea and land coming together. It really comes out in the foods. They tend to be light and flavorful...just like this dish. Thin pasta is wrapped around Caciotta cheese--this basically means cheese from central Italy--and served in a light tomato sauce. The cheese mingling with the tomatoes forms a sauce that takes on an appearance of a pink sauce. The pasta was well cooked and seasoned. We will definitely be back for this one soon!

Man, this dish is a tour de deliciousness. Part of the genius of it is the simplicity of the brown butter sauce that envelops the rich, braised beef. The short rib is braised with wine and stock and vegetables. And all of that flavor development shines through. The thin, housemade pasta is light and has a perfect "toothiness". The butter is slowly browned so it doesn't burn as it develops nutty flavor and a splash of pasta water holds the color and adds a little salinity. It's pretty perfect!

This rolled pasta has become a staple of ours when the odd craving for "summertime pasta" arises. Usually on a rainy day at the beach house we will make a drive up from Charlestown to South County Commons to the always good Trattoria Romana. We love this Canneloni. The Bolognese sauce is rich and flavorful. The pasta is perfectly cooked and holds up to the rich Bechemel sauce that tops the whole dish. The flavors of sausage and beef and veal come through well too, considering the weight of the sauce on top.

We needed a classic on the list and this dish definitely qualifies...in a good way! We love the Broadway area and its eclectic restaurants and shops. We also love the history of the area and the restaurant that sits in the Italo-American Club is top-notch Italian. This classic cheese ravioli is served with a meatball or sausage and comes topped with their addictive house gravy. Nothing frou-frou here, just good, hearty pasta and sauce and a really tasty meatball. It may have been the deal-sealer.

So who says that it must be a filled pasta? Not us! Leave it to the Italians to re-purpose one of the most popular French foods of all-time. This favorite of ours takes the perfect French crepe and somehow takes it to new heights with the addition of some Italian classics. Chef Brian Kingsford takes rich and buttery crepes and fills them with spinach and ricotta. He then tops them with flavorful San Marzano tomatoes and sharp Parmagiano Reggiano and bakes them just like a baked pasta. The result is somehow lighter and richer at the same time!
