Embracing the Burgundian Lifestyle with Founder Matlock on LIVE

A year after launching The Burgundian, Shane Matlock is continuing to share his love of food the best way he knows how: through waffles.
Over a decade in the army brought Matlock all across Europe, introducing him to Belgian liege waffles and the Burgundian way of life.
Burgundians trace their roots back to the 1400s and describe themselves as those who “love all food and drink, both in quality and quantity, shared among friends.” More than a foodie, a Burgundian appreciates not just food but the experience of eating and sharing it as well.
GET THE LATEST BREAKING NEWS HERE -- SIGN UP FOR GOLOCAL FREE DAILY EBLASTMatlock describes the waffles as “the love child of a brioche donut dough and a fry donut dough.” Unlike a traditional waffle made from batter, liege waffles are made with yeast-based dough that proofs overnight, creating a heartier, fluffier product that is the perfect vehicle for an array of toppings, both savory and sweet.
Though they have not yet opened their own standalone location, The Burgundian can be found all over Rhode Island and Southern Massachusetts through a series of pop-up collaborations with local businesses and breweries, such as PVDonuts.
Following a successful Kickstarter campaign, a one-of-a-kind double-decker bus is in the works, part food truck and part café. The top floor will be all seating areas, with café-style service on the bottom. The truck is currently being built in England and will feature centuries-old reclaimed wood in its design. Also in the works is a more traditional food truck, which Matlock says they hope to launch very soon.
Matlock alluded to the possibility of a permanent location in the future, saying they love downtown Providence and that “several exciting things are in the works.”
