Spend time in the kitchen with Karsten Hart

Now that the kids are safely stowed at school, let's get serious about the students that really matter... us. Here are five great courses to take this fall to make your life a whole lot richer.

1. Cooking class in haute style

Castle Hill Inn, RI's Relais & Chateaux property in Newport, will feature acclaimed chef, Karsten Hart, leading a series of intimate cooking classes in Castle Hill’s kitchen this fall. Scheduled for Tuesday, October 18 and Tuesday November 8, the classes will run from 8am-1pm, followed by a 4-course luncheon with paired wines. The October class will feature an array of sweet and savory pasta dishes, and the November course is themed "Epicurian," focusing on gourmet delicacies from land and sea. Attendees will receive a custom Castle Hill chef's jacket embroidered with their name, plus a recipe book signed by Chef Hart. Cost per student is $325, and there is a maximum of 6 students per class. For more information, please call 324-4500 or visit www.castlehillinn.com.

Cooper your own barrel at Keeseh

It's nearly impossible to decide which amazing course you'll want to take at this ever-expanding workshop facility in Providence that offers everything from basic woodworking to Rhino 3-D computer rendering classes, but the highlight of the fall might be the 2-part Coopering lecture and workshop in October/November, where Asher Dunn will teach you how to make (and then you'll make) your own oak barrel. Lecture Oct 26, $55; Workshop Wed nights 7-10pm Nov 2, 9, 16, $200+$70 material fee. For more information go to http://keesehstudio.com. 42 Rice Street, Providence.

4. Fall flyfishing classes

You'll swear you're on vacation in Vermont when you join these fly-fishing courses courtesy of the Department of Environmental Management's Division of Fish and Wildlife. Try an introductory workshop on freshwater fly-fishing on Sat Oct 8 from 9am-3pm at Addieville East Game Farm in Mapleville, which will cover casting techniques, fly-tying, tackle needs, and knot-tying (plus time on the water). For more practiced hands, how about a fly-fishing safari around Aquidneck Island on the Old Colony Train on Oct 15, with stops at several remote public-access fishing areas around the island. The program is designed for salt-water fly-fishermen of varying levels. Both workshops are $35
