GoLocalProv and Dave's Marketplace have teamed up to offer "Healthy Meals to Cook At Home." This series offers some of New England's best ideas for healthy cooking delicious meals, made from fresh, wholesome ingredients, in your own kitchen. This week's recipe; Artichoke and Lemon Spread, is simple to prepare, makes for a great snack, and is just as healthy as it is tasty.

Artichoke and Lemon Spread

Ingredients

  • • 1 can (15 oz) Quartered Artichoke Hearts, drained
  • • ½ Lemon
  • • ¼ cup lemon zest
  • • 1 tsp parsley
  • • ½ tsp black pepper
  • • 1/3 cup parmesan cheese
  • • 2 tbs Olive oIl
  • • 1 tbs Blended Oil
  • • 2 tbs Chablis Wine
  • • ½ tsp salt

Instructions

  • • Drain Artichokes well and squeeze excess liquid out
  • • Place all other ingredients with artichokes into food processor and pulse until well blended.
  • • Chill and serve
